In fermentation production, excellent bacterial strains only provide the possibility of achieving high yields, and to turn this possibility into reality, necessary environmental conditions must be provided. Microorganisms are particularly sensitive to environmental conditions, and they themselves have multiple metabolic pathways. Changes in environmental conditions can easily cause changes in microbial metabolism. Therefore, mastering and controlling fermentation conditions correctly is of great significance for improving fermentation yield.
In order to reasonably control various fermentation conditions, Beijing Jiade suggests that you first need various monitoring and determination methods. According to the fermentation demand of the product, you can select some parameters for detection. The monitoring index parameters of the fermentation process include temperature, pressure, mixing, speed, foam, power consumption PH、ORP、DO、 And multiple gases, etc. A general monitoring system consists of three parts: measuring components, control components, and executing components; The control methods include manual control and automatic control.
Microbial growth and product synthesis require appropriate temperature conditions, and a certain temperature environment must be maintained during the fermentation process. Due to the use of carbon sources and energy for metabolic activities by microorganisms, exothermic reactions can be generated. In addition, stirring can also generate a certain amount of heat, so the speed of temperature rise during fermentation can often serve as a rough reference for judging the fermentation rate. Fermentation is normal, and when the bacterial growth and reproduction are vigorous, the natural temperature rise is faster. In the later stage of fermentation, the temperature rise is slower. In order to maintain the suitable temperature for growth, it is necessary to adjust the cooling water or steam in the heat transfer device of the fermentation tank at any time during the fermentation process to maintain the temperature of the fermentation liquid.
The growth and reproduction of various microorganisms have their own optimal pH requirements, and the synthesis of products often requires a certain pH environment. Many microorganisms can undergo different metabolic processes under different pH conditions.

The existence of foam will increase the bubble volume, reduce the dissolved oxygen in the cultured tea, block the discharge of CO, and affect the normal metabolism of microorganisms. If the foam rises too high and is not controlled, it will also cause the fermentation liquid to escape along the exhaust pipe or the foam to rise to the top of the tank, and seep out from the shaft seal, causing bacteria contamination.
To solve the problem of foam, we should first try to reduce the production of foam, such as improving the formula of culture medium and reducing some substances that produce foam. Secondly, when foam is produced, try every means to eliminate it.
