Application of steam generator in juice concentration production
Date: 2025-10-11Read: 3

The steam generator is mainly used in juice concentration production by providing a stable heat source to assist in the evaporation of juice moisture and the efficient operation of the concentration process. Its application scenarios and technical characteristics are as follows: 1. The core role of juice concentration process and steam generator is to increase the concentration of soluble solids (such as sugar, vitamins, etc.) in juice by removing moisture. Common processes include vacuum concentration, thin film evaporation concentration, etc. The steam generator mainly plays the role of heating medium and energy supply: 1 Heating fruit juice promotes the evaporation of water. The high-temperature steam generated by the steam generator (usually saturated steam, pressure 0.3-0.8MPa, temperature 130-170 ℃) indirectly contacts the fruit juice through heat exchangers (such as tube and plate heat exchangers), transferring heat to the fruit juice and raising its temperature to the boiling point (lower boiling point in vacuum environment can reduce nutrient loss). The water evaporates to form steam, which is condensed and discharged to achieve concentration. 2. Maintain the vacuum degree of the vacuum concentration system. In the vacuum concentration tank, the steam generated by the steam generator can be used to heat the juice inside the tank. At the same time, some of the steam is used to create a negative pressure environment through a jet pump or vacuum pump, reducing the boiling point of the juice (for example, at a vacuum degree of -0.08MPa, the boiling point of the juice can be lowered to around 50 ℃), avoiding high temperature damage to heat sensitive components such as vitamins and flavor substances. 3. The high-temperature steam generated by the equipment cleaning and sterilization steam generator can be used for CIP (in-situ cleaning) and SIP (online sterilization) of concentration equipment (such as concentration tanks, pipelines, heat exchangers). Through steam fumigation or cyclic flushing, the microorganisms on the surface of the equipment are killed, ensuring the hygiene and safety of the production process and meeting food grade standards. 2、 Specific application scenarios of steam generator in juice concentration 1 The heat source supply process in vacuum concentration technology: Pre treated juice (such as filtration and enzyme inactivation) enters the vacuum concentration tank, and the steam generator delivers steam to the heating jacket or coil inside the tank to heat the juice to the set temperature (usually 50-70 ℃). At the same time, the vacuum system maintains negative pressure inside the tank. After water evaporation, it is condensed and recovered, and the concentrated juice reaches the target concentration (such as sugar concentration from 10 ° Brix to above 65 ° Brix). Technical advantages: Steam heating has the characteristics of high heat transfer efficiency and uniform temperature, which can avoid browning or nutrient damage caused by local overheating of fruit juice; Meanwhile, the steam pressure and temperature can be precisely adjusted through an automatic control system (such as PLC+sensors) to meet the thermal sensitivity requirements of different juices (such as citrus juice, apple juice, carrot juice, etc.). 2. Characteristics of thermal energy support process in thin film evaporation concentration: Thin film evaporation equipment (such as falling film and rising film evaporators) use steam heating to form a very thin liquid film on the heated surface of the juice, and the water evaporates quickly. The steam generator provides a stable steam heat source for the evaporation tube, and the liquid film flows under the action of gravity or centrifugal force, with a high heat transfer coefficient (up to 2000-5000 W/(m ² · K)), and the concentration efficiency is 3-5 times higher than traditional kettle concentration. Energy saving design: Some steam generators can be combined with multi effect evaporation systems (such as second effect and third effect). The secondary steam generated by the previous effect evaporation can be used as the heat source for the next effect, reducing the consumption of fresh steam and increasing the steam utilization rate to over 70%, thereby reducing energy consumption costs. 3. Auxiliary process: juice preheating and aroma recovery preheating treatment: Before entering the concentration equipment, the juice can be preheated to 30-40 ℃ through a steam heat exchanger to improve subsequent concentration efficiency and reduce heat loss during the concentration process. Aroma component recovery: The steam generated by the evaporation of fruit juice contains volatile aroma substances (such as esters and aldehydes). The steam generator, combined with the aroma recovery device, separates the aroma components through low-temperature condensation (using the residual heat of steam condensate to adjust the temperature) and adds them back to the concentrated juice to improve the flavor of the product. 3、 Selection and technical requirements for steam generators for juice concentration: 1. Type selection: Electric heating steam generator: suitable for small production lines, converting electrical energy into thermal energy, no pollutant emissions, high temperature control accuracy (± 1 ℃), but high operating costs, suitable for environments with strict environmental requirements. Gas/oil steam generator: using natural gas, liquefied petroleum gas or light oil as fuel, the thermal efficiency can reach over 90%, the gas production speed is fast, suitable for medium and large production lines, and requires a flue gas treatment device to meet environmental standards. 2. Key technical indicators: Steam purity: It needs to meet food grade standards, and the steam should be free of impurities such as oil and rust to avoid contaminating the juice. Stainless steel evaporators and pipelines are usually used, and the steam condensate water needs to be tested and confirmed to be free of pollution. Temperature control and pressure control accuracy: Real time monitoring through pressure sensors and temperature sensors, with steam pressure fluctuations of ≤± 0.02MPa and temperature fluctuations of ≤± 2 ℃, ensuring stable concentration process and avoiding excessive heating of juice. Energy saving design: equipped with a condensate water recovery system, the high-temperature water condensed from steam is reused for boiler makeup water, reducing heat loss; Some equipment uses frequency conversion technology to regulate steam output and dynamically adjust energy consumption based on concentration load. 4、 Advantages and precautions of steam generator in juice concentration 1 Core advantage of efficient concentration and reduced nutrient loss: By controlling steam temperature and vacuum degree, rapid concentration can be achieved at low temperatures, and the retention rate of thermosensitive components such as vitamin C and polyphenols is increased by 20% -30% compared to atmospheric pressure concentration. High process flexibility: The steam parameters can be adjusted according to the characteristics of different juices (such as gel content and acid value), and are suitable for various concentration processes (such as single effect, multi effect, MVR mechanical steam recompression). Compliant with food safety production standards: Steam sterilization function can replace chemical disinfection, reduce the risk of residual cleaning agents, and meet the requirements of food safety systems such as HACCP and GMP. 2. Application precautions: Anti scaling and maintenance: Minerals (such as calcium and magnesium ions) in fruit juice are prone to form scale during heating, which adheres to the surface of the heat exchanger and reduces heat transfer efficiency. It is necessary to regularly acid wash (such as citric acid solution) or mechanically clean the steam generator and heat exchanger. It is recommended to clean them every 10-15 days of production. Safety monitoring: Steam generators need to be equipped with safety valves, pressure alarms, and other devices to avoid overpressure operation; The vacuum system and steam system need to be linked and controlled to prevent the boiling point of juice from increasing and the quality from decreasing due to insufficient vacuum degree. Energy optimization: Select the type of steam generator based on the energy structure of the factory (such as prioritizing gas-fired models in areas with low natural gas prices), and further reduce energy consumption through waste heat recovery systems (such as preheating juice with steam condensate). 5、 Typical case and industry trend: In the field of citrus juice concentration, a large juice enterprise adopts a three effect vacuum concentration system+gas steam generator, reducing steam consumption from the traditional single effect concentration of 3.5t/t juice to 1.2t/t juice. The concentration time is shortened from 4 hours to 1.5 hours, and the vitamin C retention rate is increased from 65% to 82%. In recent years, with the development of MVR (mechanical vapor recompression) technology, the combination of steam generators and heat pumps, using electric energy to drive compressors to raise the temperature and pressure of secondary steam and reuse it, further reducing steam consumption, has become the development direction of green concentration technology. In summary, steam generators have become one of the core equipment for improving juice quality and production efficiency through their precise heating, energy-saving, high-efficiency, and hygienic safety characteristics in juice concentration. Their application needs to be combined with process requirements, equipment selection, and safety maintenance to achieve the best concentration effect.
