Microwave baking uses the heated material itself as a heating element, and the baking effect of microwaves can instantly penetrate into the interior of the material, heating both inside and outside the material simultaneously without the need for heat conduction. Therefore, the temperature rise is fast, greatly reducing the heating time, which is generally about 1/4 of the conventional method. Baking, like other food processing, is a complex physical and chemical system that requires orderly occurrence and appropriate time/temperature conditions.
