The taste and quality of chili sauce depend on the fineness and uniformity after grinding, and the feed rate, as the core variable of chili sauce grinding machine operation, directly determines whether the equipment can operate efficiently. Chili sauce raw materials have the characteristics of viscosity and uneven particle size. Feeding too quickly can easily cause equipment motor overload, while feeding too slowly can cause grinding to run idle and reduce production capacity. Mastering the control logic of feed rate and dynamically adjusting it based on material status and equipment characteristics is the key to avoiding production problems and ensuring the quality of chili sauce.
The control of feed rate needs to be based on the pre-treatment status of the material, which is the primary prerequisite. Fresh chili peppers, after removing the stems and cleaning, contain a large amount of water and have strong viscosity. If they are directly put into the grinder in large pieces, even low-speed feeding can easily cause blockages at the feeding port. This type of material needs to be diced first, cutting the chili into 1-2 centimeter pieces. At this time, the feeding rate can be controlled at 100-150kg/h. Combined with the spiral feeding structure of the feeding port, it ensures that the material enters the grinding chamber evenly. For dry chili or composite chili sauce raw materials with added fermented soybeans and peanuts, due to the presence of hard particles, they need to be processed by a coarse crusher to 3-5 mm particles. The feeding rate should be reduced to 80-120kg/h, and the feeding inlet spray device should be turned on to reduce material viscosity and risk through a small amount of water mist.

Matching the grinding capacity of the equipment and setting the basic feed rate is the core principle to avoid uneven grinding. Different models of grinding machines have different disc speeds and grinding clearances, resulting in significant differences in the upper limit of the feed they can carry. Small laboratory grinders (power 1.5-2.2kW) typically have a disc speed of 1500-2000r/min, suitable for small batch production. The feed rate should be controlled within 5-10kg/h. If this range is exceeded, materials will accumulate at the disc and cannot fully contact the grinding edge, resulting in unground chili peels in the finished product. The industrial grade grinder (power 5.5-7.5kW) is equipped with a multi-stage grinding structure. The speed of the first stage rough grinding disc can reach 3000r/min, and the feeding rate can be increased to 200-300kg/h. However, it needs to be fed at a constant speed through a variable frequency feeder to avoid instantaneous peak feeding exceeding the equipment load.
Dynamically adjusting the rate based on equipment feedback during the grinding process is a key means of achieving precise control. The current, noise, and discharge status during equipment operation are intuitive signals for determining whether the feed rate is reasonable. If the ammeter displays a continuous current exceeding 110% of the rated value, or if the equipment makes a "stuttering" abnormal noise, it indicates that the feed rate is too fast, resulting in excessive load on the cutterhead. The feed rate should be immediately reduced by 10% -20%, and the current should be observed to decrease. If the chili sauce at the discharge port is in a "brushed" shape and contains obvious particles, it may be due to a slow feeding rate, which causes excessive friction of the material in the grinding chamber, resulting in high temperature and increased viscosity. At this time, the feeding rate can be appropriately increased to use the material flow to take away some heat and improve the grinding effect.
The control of feed rate in special scenarios requires a balance between quality and efficiency. When producing children's chili sauce with ultra delicate texture, the "low rate+multi cycle" mode should be used to reduce the feed rate to 50% of the conventional value, prolong the residence time of the material in the grinding chamber, and achieve a particle free texture with a fine grinding gap of 0.1 millimeters. When mass producing coarse chili sauce for seasoning, the feeding rate can be increased to the rated upper limit of the equipment, and the grinding gap can be increased to 0.5 millimeters. Through "high-speed feeding+coarse grinding", the production capacity can be increased to meet the bulk demand of the catering industry. In addition, when producing continuously for more than 4 hours, it is necessary to reduce the feed rate by 20% per hour and run for 5 minutes to use the idle inertia of the equipment to clean the residual viscous materials in the grinding chamber and avoid odor caused by long-term accumulation.
From small-scale production in family workshops to large-scale production in food factories, the feed rate control of chili sauce grinders always revolves around the three core values of "material adaptation, equipment matching, and dynamic adjustment". By optimizing the material state through pre-processing, setting the basic rate based on equipment power, and combining real-time adjustment with operational feedback, it can effectively avoid uneven grinding problems and improve production efficiency while ensuring quality. With the development of automation technology, intelligent grinding machines with automatic recognition and adjustment of feed rate are gradually becoming popular, providing strong support for the standardization and efficiency of chili sauce production.
