Food stability testing box refers to the testing of food through certain procedures and methods to examine the sensory, chemical, physical, and biological changes of samples. By conducting stability tests, the degree and pattern of changes in sensory, chemical, physical, and biological properties of samples under different environmental conditions (such as temperature, relative humidity, etc.) over time are examined to determine the stability of sample packaging, storage conditions, and shelf life.
According to the different characteristics of the sample, the stability test of the food stability testing box can adopt short-term test, long-term test or accelerated test.
1. Short term test: The shelf life of this type of sample is generally within 6 months (including 6 months), and its stability is tested under normal temperature or storage conditions specified in the instructions.
2. Long term test: This type of sample generally has a shelf life of more than 6 months, and the stability of the sample is tested under the conditions specified in the instruction manual.
3. Accelerated testing: This type of sample generally has a shelf life of 2 years. To shorten the testing time, stability testing can be conducted under accelerated conditions to examine the sensory, chemical, physical, and biological changes of the sample.
1Stability testing equipmentTest requirements:
1. Sample classification:
-Ordinary samples: Samples without special storage conditions can be stored at room temperature, such as solid samples (tablets, capsules, granules, powders, etc.); Liquid samples (oral liquids, beverages, alcoholic beverages, etc.).
-Special samples. Samples with special storage requirements, such as probiotics, fresh royal jelly, etc.
2. Sample batch, sampling and dosage. It should comply with current regulations and meet the requirements of stability testing.
3. Sample packaging and testing placement conditions. The packaging materials, specifications, and packaging conditions used for stability testing samples should be consistent with the requirements of product quality standards and instructions.
-Ordinary samples: Accelerated testing should be stored for 3 months under conditions of temperature 37 ± 2 ℃, relative humidity RH75 ± 5%, and avoiding direct sunlight.
Short term and long-term tests should be stored under the storage conditions specified in the instructions, and the storage time should be determined according to the product quality standards and the shelf life claimed in the instructions.
-Special samples: Store under the storage conditions specified in the instruction manual.
4. Test time: Multiple evaluation time points should be set up in the stability test, and the evaluation time points should be based on the understanding of the properties (sensory, physicochemical, biological) of the sample and the trend of its changes.
-Ordinary samples: Long term testing should generally be conducted at the same time as the shelf life of the sample. For samples with a shelf life of 2 years, samples at 0, 3, 6, 9, 12, 18, and 24 months should be tested. The hygiene test results of the same batch of samples can be used for the data of 0 months.
The acceleration test generally lasts for 3 months, which means that samples placed for 0, 1, 2, and 3 months are examined. The hygiene test results of the same batch of samples can be used for the data of 0 months.
-Special samples: Conduct inspections under the storage conditions specified in the instruction manual. For products with a shelf life of less than 3 months, testing should be conducted at 0 and the end of the month (days) of storage; For products with a shelf life greater than 3 months, testing should be conducted every 3 months (including storage at 0 and final months).
5. Inspection indicators: The hygiene of the samples submitted by the applicant for inspection and the changes in the indicators related to product quality during the shelf life should be tested according to the methods specified in the product quality standards.
6. Testing method: Stability test indicators should be tested according to the inspection methods specified in the product quality standards.
